FAQ
Frequently asked
About our cacao, our farm, and how to order — retail or wholesale.
Where does your cacao come from?
Every bean is grown on our family farm in Loma de los Ángeles, La Vega, Dominican Republic — in the heart of the Cibao Valley. Our grandmother Rosina founded the operation over a decade ago on former tobacco land. We are not a co-op blend or a broker resale; you are buying directly from the farm.
What varietal are your beans?
Trinitario/Criollo blend — a fine-flavor profile recognized by the cacao industry as among the most sought-after for craft chocolate, ceremonial paste, and specialty beverage use.
How are the beans processed?
After hand-harvest, beans are naturally fermented for 5–7 days in traditional wooden boxes (with the cacao pulp), then sun-dried on raised platforms until they reach 6–7% moisture. Hand-sorted before packing. No mechanical drying, no chemical treatment, no additives. Ingredients: 100% raw cacao beans.
Are you USDA Organic certified?
USDA Organic certification is in progress. We currently position our beans as ceremonial-grade single-origin while certification completes. Our practices have always been organic; we’re documenting the paperwork.
What does the cacao taste like?
Clean cocoa base, nutty notes, mild bitterness, low acidity. The hallmark profile of a fine-flavor Trinitario/Criollo grown in Cibao Valley terroir. It works beautifully in single-origin chocolate bars, ceremonial cacao paste, cold-brew cacao, and chocolate stouts.
Shipping & storage
How long does shipping take?
Retail orders (raw beans, roasted beans, sample kit): ship within 1–3 business days from Miami; arrive within 3–7 days depending on US zone.
Wholesale orders (50 kg jute sacks): 7–14 days from PO to ship, depending on volume and freight method. Shipping quote provided per order.
How do I store the beans?
Cool, dry, sealed — out of direct sunlight. Raw beans keep 12+ months. Roasted beans are best within 6 months for peak flavor.
Do you ship internationally?
Currently US wholesale + retail only via our website. For international wholesale inquiries (Canada, EU, UK, MX), email joselly@rosinasranchfarm.com — we’ll quote freight separately. EXW / FOB / CIF terms available.
Wholesale
What’s the minimum order quantity?
200 kg (4 × 50 kg jute sacks). This is our Pilot tier — ideal for chocolatiers and craft chocolate makers running a first batch with our beans.
Can I get a sample first?
Yes. Order the 5 lb Discovery Sample Kit ($39) — same beans we ship wholesale, plus the full spec sheet and pricing guide. We credit the sample cost to your first 200 kg+ order.
What are your payment terms?
50% deposit, 50% prior to shipment. Wire transfer or ACH preferred for wholesale. Recurring and Preferred Partner accounts can be invoiced Net 15 after the first paid pilot order.
Ceremony & preparation
How do I prepare ceremonial cacao from your beans?
Start with our roasted beans (or roast our raw beans at home at 250°F for 20–30 min). Crack and peel the husk to expose the nibs. Grind nibs in a high-power blender or melanger until smooth (10–30 min depending on equipment) to make ceremonial paste. Whisk 1–1.5 oz of paste into 8 oz hot water with a pinch of cinnamon or chile to taste.
We honor the traditions of ceremonial cacao while respecting Indigenous lineages. We do not claim to teach ceremony — we provide the cacao for practitioners who do.
Returns & refunds
If a retail order arrives damaged or doesn’t meet expectations, email joselly@rosinasranchfarm.com within 14 days. We’ll make it right with a refund or replacement. Wholesale orders are non-refundable once shipped but we work to resolve quality concerns directly.
